Hello insta fam … i hope you all are doing well , and hopefully you all had an amazing eid since eid has passed and we’re all tired of the typical chicken and meat dishes i would like to share something veggie yummy it has also been my most requested recipe since I posted the picture on my story during eid dawats… made by my aunt in law so lets get ahead with the recipe…

Mix Vegetables

250g Papdi
250g Bhinda/Okra (cut into long Slices)
250g Sweet Potatoes 🍠
1 Cup Pigeon peas/Tuver Dana
3 Ringra/EggPlant
200g Gilora/Tindora (Cut into Slices)
200g Green Beans

-fry Papdi, Bhinda, Eggplant, Gilora, Beans SEPARATELY In Wok With salt And Little oil and Keep Aside
-Boil Sweet Potato
-Boil Tuver Dana Separately

-Into The Pot Make Vaghar add in Few Curry Leaves, Some Whole cumin, 1 Tspn Rai(Mustard Seeds), Whole Dry Red Chilies and 1/2 Tspn Hing (asafoetida), Then Braise in 2 medium Chopped onion, sauté Until Translucent, Then Add in 3 Tomatoes (purée), Green Chili Paste To Taste, Coriander Powder, Turmeric, Garam Masala, Salt, 1-2 Tspn Undhiya Masala (i used j.p home) Cook everything for few minutes Then Add all Fried Vegetables Into Masala And Toss Well. Cook For Few minutes.
Fry Patrelya Separately and Place Over Cooked Veggies Before Serving.
Sprinkle coriander.

  1. Is that patra on top? I make mix sabzi but never added Gilora and Bhinda. Going to try your version Insha’Allah!
